A Taco Salad Bar is a a healthy fun meal for your Cinco de Mayo celebration~I cooked some ground turkey with taco seasoning. On the platter I cut up some our favorite toppings to choose from: tomatoes, green onion, beans, olives and fresh avocado sliced. Among the choices for toppings: grated light mexican cheese blend, fat free sour cream, guacamole, corn salsa and traditional salsa. Trader Joes also makes a good reduced fat cilantro dressing that I had provided as an additional choice for those that prefer a dressing. I sliced corn tortillas into strips and wedges and fried them to serve.
I enjoy that I can serve a meal that my family enjoys and feel good about it being a healthier option.
